Chen Saat Murphy


Chen graduated with a Master of Science Degree in Personalised Nutrition from Middlesex University (in collaboration with CNELM) in 2015, after qualifying as a Nutritional Therapist from IHS in 2011.

She founded her Galway-based, personalised nutrition practice, “True Food Healing”, shortly after graduating from IHS, and sees clients on a one-to-one basis, while applying the Functional Medicine Model. Chen is also the co-founder of “The Real Vitality Project”, a series of educational & culinary evenings dedicated to women at different stages of their lives, and this is where she gets to combine her love of current nutrition science, her passion for teaching and her joy for healthy, creative cooking.

In addition, she is a nutritional consultant for a local gym, where she provides information to the team and the gym members and runs public talks. She has a special interest in women’s health, vitality and mind-body-behaviour connection, and her MSc research was a mechanism review of the role of inflammation in the link between oestrogen expression and obesity. Chen joined the IHS team in 2017 and is currently a Unit Leader and a lecturer.
